Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

 

For this month’s recipe, Little Plant Food Truck’s Alex, Paul, and Saya will be making a Vegan SHAWARMA BOWL.

Vegan SHAWARMA BOWL ingredients (Serves 4-5 people):

1 Head of Romanesco/Cauliflower
1 Cup of dry Brown Rice
1 Block of Tofu (firm)
Arugula or Kale (Preferred Amount)
1 Sweet Bell Pepper
1/4 head of shredded red cabbage
1 bunch green onion for garnish (chopped)
Fresh Parsley Chopped
1 Can Black Beans (sodium free/low sodium)
Seeds to garnish (optional)
Shawarma Spice

Raw Tahini Dressing:  
1/3 cup of raw tahini
2 tsp shawarma
1 Tbl Wine rice vinegar
1 tsp flaxseed meal
3 Tbl Braggs amino
2 tsp date sugar
2 tsp shawarma spice

Shawarma Spice:   
1 TBL Cumin
1 TBL Coriander
1 TBL Garlic powder
1 TBL Ginger powder
1 tsp paprika
1 tsp cinnamon
Pinch of Cayenne
1/2 tsp all spice

Tofu and Romanesco Marinade:
2 TBL Shawarma Spice
4 TBL Braggs Amino
2 tsp Date sugar or Coconut Sugar
