Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

For this month’s recipe, Josie Keating, owner of Josie’s Art Lab, will be featuring: BAKED ZUCCHINI, BLACK BEAN, AND FETA CHIMICHANGAS.

Baked Zucchini, Black Bean, and Feta Chimichangas ingredients:

3 medium zucchini, cubed
1.5 c frozen sweet corn, thawed
1# red or yellow potatoes, diced 1/2”
1 onion, halved and sliced
olive oil
salt and pepper
1 can green chiles, drained
1 can black beans, rinsed and drained (1 1/3 cup cooked dried black beans)
8 oz feta, crumbled
Large flour tortillas
1/4 butter, melted

Cilantro-y Coleslaw ingredients:

3/4 head of cabbage, sliced thinly
1 large carrot, grated
1 bunch of green onions, minced
1/4 c vegetable oil
salt and pepper
1 Tb sugar
3 TB red wine vinegar
1 bunch cilantro, chopped
