Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

 

For this month’s recipe, Linda Laverty, yoga instructor at SWOCC, will be featuring: HOPPING JOHN SALAD.

Event is FREE and open to everyone!

 

Hopping John Salad ingredients:1/2 lb. of cooked and rinsed thoroughly, black eyed peas.
You can use canned, but rinse well.

1 stalk of celery
Half a purple onion
1 cucumber
1 cup of minced (chopped) parsley
1 half cup of seasoned rice vinegar
1 half cup of olive oil, or oil of your preference.
1 tablespoon of granulated garlic
Salt
Pepper

Compliment Dish (Roasted Vegetables):

2 carrots
1 sweet onion
2 beets
1 yam
1 red or yellow potato
1 stalk of celery
1 parsnip
Any other "root" vegetable you like may be added
4 cloves of fresh garlic
Olive oil or preferred oil
Rosemary
Rosemary sprigs
Salt
Pepper
