Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

For this month’s recipe, Tim Bulster from Coos Head’s Outreach and Marketing Department will be making Spaghetti Squash Marinara with Kale Salad.

Spaghetti Squash Marinara with Kale Salad ingredients:

Spaghetti Squash:
1 Small to medium sized spaghetti squash
1/2 cup Parmesean Cheese or Violife Parmesean Cheese Alternative
Olive Oil (available in bulk)

Sauce:
1 28 oz. can of crushed tomatoes
1 small onion
4 cloves of garlic
Dried basil (available in bulk)
Dried thyme (available in bulk)
Optional: Red pepper flakes (available in bulk)

Salad:
1 bunch of kale
1 cup Parmesan cheese or Violife Parmesan Cheese Alternative
1/2 Lemon or 1/4 cup lemon juice
¼ cup olive oil
3 cloves garlic
Salt & pepper (available in bulk)
Optional: carrots, cherry tomatoes, cucumbers, golden raisins

*Optional protein: Vegan or regular sausage, ground beef, Italian seitan, or whatever you like to add to spaghetti! This will not part of the on-screen recipe.
