Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

 

For this month’s recipe, we are excited to announce the return of our original chef, Jamar Ruff, who will be featuring: CORNBREAD FRITTERS, GARDEN SALAD, & ROASTED PEARS

Cornbread Fritters, Garden Salad, & Roasted Pears ingredients:

1 Cup of Cornmeal (think bulk) can reduce to half a cup
1 Cup of Flour (think bulk) can reduce to half a cup
1 Egg (if you have questions about what to use instead of egg: Mashed Bananas, Apple Sauce or Flax Seed)
Water
1 to 2 Jalapeño
1 Pint of Tomatoes or Heirloom Tomatoes (remember this is a $25 meal, so read the labels that say per pound)
1 Cucumber
2 Starkrimson Pears
1 Ear of Corn
1 Package of Chevre Goat Cheese (Co-op has a good variety of plant-based cheeses)
Olive Oil
Salt
Pepper
1 Tablespoon of Cumin (think bulk)
1 teaspoon of Cardamom (think bulk)
2 Tablespoons of Rice Wine Vinegar

You will need:
Frying Pan
Spatula
Cookie Sheet or Roasting Pan
Parchment Paper
Mixing Bowl
Prep Bowl for Salad
Wisk
