Coos Earth Tempeh Tacos ingredients:
1 to 2 Cups of Tempeh (Surata 12 oz) (chopped into small bite size pieces)
1 Sweet Onions (diced and divided evenly)
1 Red Bell Pepper (diced and divided evenly)
½ Cup Chopped Italian Parsley
½ Cup Green Onion (diced)
1 to 1 ½ Cup of Yellow Squash (chopped)
3 Cremini Mushrooms
1 Bunch of Collards (if you need to reduce the bunch that is perfectly fine depending on how many tacos you will need)
1T Smoked Paprika
½ tsp Cumin
¼ tsp Cumin (we'll be using Cumin twice for this recipe)
You will need:
1 Pot for Boiling Water / A Large Bowl for Cold Water
2 Big Spoons – 1 pair of Tongs
