Coos Head Stuffed Bell Peppers ingredients:
2 to 3 Red Bell Peppers (we will slice in halves and stuff)
4 Buttons - Crimini Mushrooms
1 Cup of Tri-Colored Quinoa
1 ½ cup of Yellow Onion (diced)
3 Cloves Garlic (chopped)
1/3 Cup of Parsley
1 to ½ Cup of Bulk Carrots (diced)
1 Cup of Fennel
2 Cups of Veggie Stock
½ teaspoon of Coriander
½ teaspoon of Dried Basil
½ teaspoon of Cumin
You will need:
1 Pot for Quinoa with Lid
1 Pot for Sautéed Veggies
Pan for Bell Peppers
2 Big Spoons
