Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

For this month’s recipe, Jamar will be featuring STUFFED ACORN SQUASH. Scroll down for ingredients.

Stuffed Acorn Squash ingredients:
1 or 2 Acorn Squash
1 Package of Surata Tempeh
½ Cup of Red Bell Peppers (Diced)
¼ Cup of Shallots (Diced)
½ Cup of Leeks (Diced)
¼ Cup of toasted Walnuts (Rough Chop and toast for 4 minutes)
½ Cup of Cremini Mushrooms (feel free to pick your favorite mushroom)
½ tsp Garlic Granules
½ tsp Smoked Paprika
½ tsp Coriander
½ tsp Cumin
½ tsp Black Pepper
Olive Oil

This recipe makes two acorn squash. If you would like to make one, you will just need to reduce the amount of tempeh you will be using. The Surata Tempeh comes with a sleeve of  two sheets of tempeh; if you are wanting to make one acorn squash just use half of the one sheet instead of a whole sheet.

You will need:
2 Medium sized pots
2 Cookie Sheets
Parchment Paper
Large Knife
Big Spoon
