Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

For this month’s recipe, Jamar will be featuring Jollof Quinoa + Salmon Croquettes. Scroll down for ingredients.

Jollof Quinoa + Salmon Croquettes ingredients:

Jollof Quinoa
1 Cup of Tri-Colored Quinoa
2 Cups of Veggies Stock (Pacific Foods Veggie Stock)
½ Cups Diced Shallots
1 Box of Cherry Tomatoes
½ tsp Black Pepper
½ tsp Cumin

Salmon Croquettes
1 Can of Think Pink Salmon
1 Red Onion (1/2 Cup Diced)
1 Tablespoon of Thyme Fresh (½ Tablespoon if Dried)
1 Egg
½ tsp Black Pepper
½ tsp Cumin
½ tsp Smoked Paprika
1 Tablespoon Flour
1 Piece of Parchment Paper
2 Pieces of Paper Towel for oil to drain

Roasted Vegetables
2 Yellow Potatoes cut in Quarters  
2 Japanese Sweet Potatoes cut in Quarters  
1 Leek
Smoked Paprika
Olive Oil

If you are vegetarian or vegan, you can use JackFruit+Chickpeas to construct the patties, please email Jamar at and we can talk through what that would look like.
You will need:
1 Sheet Pan + Parchment Paper (for Roasting Vegetables)
1 Bowl (for preparing the Salmon Croquettes)
1 Spatula
1 Pot with Lid for the Quinoa  
1 Frying Pan  
1 Pan for (draining Salmon Croquettes)
1 Big Spoon
