Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Coos Head Pumpkin Curry ingredients:

1 Box of Pacific Foods Vegetable Broth 32oz
1 Can of Farmers Market Pumpkin Puree
1 Box of Jacks Quality Chickpeas
1 Cup of Tri-Color Quinoa (Found in bulk department)
1 Red Onion
1 Red Bell Pepper
5 Buttons Cremini Mushrooms
1 Poblano Pepper (Seeds removed) (Optional)
½ Cup of Chopped Cilantro (Save some for garnish)
½ teaspoon of Curry (Bulk #7536)
½ teaspoon of Cumin
¼ teaspoon of Turmeric
¼ teaspoon of Chili Powder (Bulk #7018)
¼ teaspoon of Black Pepper
Olive Oil

You will need:
1 Pot for Pumpkin Curry
1 Pot with Lid for Quinoa  
1 Measuring Cup
2 Big Spoons
