Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

 

For this month’s recipe, Jamar will be featuring COOS HEAD SUMMER LASAGNE. Scroll down for ingredients.

Coos Head Summer Lasagne ingredients:
1 Medium Yellow Squash
1 Medium Green Zucchini
1 Ear of Corn
1 Cup of Broccolini
1 Red Onion (evenly divided)
3 Cloves Garlic
1 Heirloom Tomato
1 Box of Durum Semolina Lasagne
1 Jar of Field Day Roasted Garlic Pasta Sauce
1 Package of Bell Gioioso Fresh Mozzarella
Olive Oil

Roasted Vegetables:
½ teaspoon of Smoked Paprika
Salt (sprinkle over the top of vegetables)
Black Pepper (sprinkle over the top of vegetables)

Pasta Sauce:
½ teaspoon of Thyme
½ teaspoon of Cumin
½ teaspoon of Smoked Paprika
Salt (to taste)
Black Pepper (to taste)

You will need:
1 Pot for Pasta Sauce
1 Pot to boil Lasagne
1 Deep Skillet (to bake your Lasagne, I will be using a cast iron skillet)
Cookie Sheet for Roasted Vegetables
One Big Bowl of Cold Water
Parchment paper
1 Strainer for the Lasagne
2 Big Spoons
