Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

For this month’s recipe, Jamar will be featuring COOS HEAD TACOS TWO WAYS. Scroll down for ingredients.

Coos Head Tacos Two Ways Ingredients:

1 14oz can of JackFruit                                                                                     

1 Pack De Casa 6inch Corn Tortilla or (your favorite Tortilla) depending on how many folks will be eating you can grab to bags.   

1 Jacks Quality Black Beans 13.4 oz (can be found in a can as well)
1 Pack of Oregon Microgreens Radish Mix
½ cup to 1 Cup of Rough Chopped Japanese Sweet Potato
½ cup to 1 Cup of Rough Chopped Cauliflower
1 bunch of Cilantro (we will be using this as a garnish and for when we make salsa)
1 Red Onion
1 Lime

1 Tomato
½ cup of sliced Red Bell pepper
Cotija Queso Cheese (we also have vegan cheese options as well available)

1 Avocado

1 Jalapeño (optional)


Jackfruit Seasonings:
¼ Teaspoon Cumin

¼ Teaspoon Smoked Paprika



Roasted Vegetable Seasonings:

½ Teaspoon Cumin

½ Teaspoon Smoked Paprika




Olive oil


You will need:
1 Pot or Frying Pan for Jackfruit
1 Saucepan for Black Beans
1 Frying Pan for Tortillas

1 Cookie Sheet/Parchment Paper (Roasting Vegetables)

1 Bowl for Salsa
2 Big Spoons
1 Spatula
